Pecan Pie Yum!


Crust
2 C flour sifted (I keep mine in the freezer)
3/4 C butter chilled cut into small cubes
1/2 tsp salt
4-6Tbs ice water

Mix flour, butter and salt until it is crumbled. Try not to let the butter get melted or soft if so put into fridge for a few minutes, once crumbled add water tablespoon at a time until dough holds together. Wrap in plastic wrap and put in fridge to chill. After 
chilled cut into two and roll out one at a time leaving 
other to chill. Roll out to fit 9in pie pan

 Pecan Pie

1 C light corn syrup
1 C brown sugar
1/3 C melted butter
3 eggs beaten
1 tsp vanilla
1/4 tsp salt
1 1/2 C pecans
9in. uncooked pie shell

Mix butter, sugar, corn syrup, eggs,vanilla and salt together. Stir in pecans, pour into 9in. uncooked pie shell. Bake in 350 degree oven for 45-50 minutes until set. Allow to cool then enjoy
